Shrimp & Spice

Friday night I wanted to make something good dinner, but also something rather light. (I'm feeling the pressure of Vegas in one week)! So I decided a sautéed shrimp dish would be delish! Plus, Munchkin loves shrimp.

Niecy's Shrimp & Spice (and everything nice):

1lb of shrimp. (I buy frozen because deveining isn't my thing)
1tbs Olive Oil
1tbs Red Pepper Flakes (or just save the packets from your pizza deliveries and use a full one of those)
1tbs Minced Garlic
2tbs Dry White Wine (do yourself a favor and buy a cheap one used only for cooking. $3.99!)
Cherry tomatoes - halved (Really any sautéed veggies would be delish)
Whole wheat pasta or whatever you want to serve it on top of

Heat the olive oil on Medium.
Add the minced garlic and red pepper flakes until fragrant.
Turn on high and add shrimp, wine, and tomatoes.
Cook for about 8 minutes, let your sauce get nice and bubbly, then lower the temp to thicken just a smidge.

Top on bed of pasta, rice, or grilled veggies!

My Simple Abundance

Today feels like a good day to write about the things I am currently most grateful for.  I've talked about the book "Simple Abundance" that first gave me the idea to begin sharing my simple abundance on my blog.  I'm currently typing this while watching Oprah's Soul Series on OWN, and she's talking to Sarah about how she lost it all.  It appears that many of the greats have hit rock bottom at some point.

I am feeling overwhelmed right now.  There are a lot of things going on in my life right now and at some times I feel like I'm just barely keeping my head above water.  I've been suffering with a migraine over the past 15 hours, and I woke up feeling extremely needy.  I realized I could spend the rest of today totally feeling sorry for myself, or I could think about all the great things that are surrounding me in my life right now.

1. Today I am grateful for my life.  In its majesty.  In its difficult times.  I am grateful for the life God has chosen me to live.

2.  I am grateful for my child.  I know every parent believes their child is the greatest, and they should, but I honestly know without a shadow of a doubt that my child is exceptional.  When I got home last Sunday, he told me a kid was pushing his head into the bus window on the way to the swimming pool.  I asked him what he did and where the camp counselors were at.  He told me the camp counselors sit at the back of the bus and that the bus driver doesn't let them look over the back of the seats.  On Monday, I talked to the head of the camp and her advise to my Munchkin was that he sit on the aisle seat so that the kid couldn't do that again and that he tell the camp counselors right away if that happens again.  Being the protective mama bear that I am, I told him that if that kid does it again, to punch him in the face.  That night, I was telling my parents what happened and my dad told Munchkin to just punch the kid in the face anyways so he knows not to mess with him.  Two days later, after really thinking about it, he told me: "Mom, I know grandpa wants me to punch the kid, but I really don't want to.  If I punch him, I'll get in trouble, so I'd rather him just not hang out with me".  I was so proud of him and he definitely spent time thinking about the consequences and solutions to the problem.

3. I am grateful for the love that is in my life.  I cannot explain how it happened - but I am so glad it did.  He brings me so much joy, peace, comfort, happiness, fulfillment....so many things.  I am so grateful for him and the man he is.  I thank God for preparing the man that he is.

4. I am grateful for the Scentsy Family opportunity that I've been graced with, the amazing women and men I get to share the opportunity with, and my customers who have become like friends and family.  Yesterday I got to sit with one of my customers who has cerebral palsy and is wheelchair bound due to a surgery on her foot that she had to have, we talked, laughed, and prayed together.

5. I am grateful.  Just grateful.  Without attaching any specific, quantifiable thing to it. I just want to live a life full of gratitude.

#sfr2013 - Drive

 Last Wednesday, my sister and I rushed to the Albuquerque Sunport at 4:30 in the morning to catch our early flight to Indianapolis for our annual Scentsy Family Reunion.  Despite running late, (I don't know how that I happened, I woke up at 3am), it was an absolutely awesome trip!

I have been with Scentsy for the past 3 years and I am so grateful that God chose for this to be the company I am building my dreams with.  I never thought I'd be in Indianapolis...but once again I find myself traveling to so many different places with this company!

Opening night was a 60s themed birthday party bash for the owner of Scentsy - Heidi Thompson.  They did a Scentsy Family got talent theme - where consultants performed their talents on the big stage at Lucas Oil Stadium.

Then following the party came the opening session and feature concert of the night!  Kelly Clarkson was our invited guest.  Can I just tell you how much I love her?  She has such a great personality, is so much fun, and the girl can sing!  Thank you Scentsy for spoiling us!

The one major complaint I have about Indianapolis is that their food service industry is not very good!  Downtown is interesting in that it's all kind of connected in a weird maze of underground access through the convention center to the Lucas Oil Stadium and glass overpasses that take you through hotels and across downtown.  I believe you could get around downtown Indy without ever stepping foot outside.  Because Wednesday was a pretty late night, we decided to go to TGI Friday's which was semi-connection to our hotel - the JW Marriott.  We sat down at around 10 pm, and by midnight 4 out of the 5 of us still hadn't received the correct meal we ordered, two of us left without eating whatsoever, and one was given a chicken dish that wasn't what she ordered but finally the waitress got so frustrated with the kitchen staff she just gave her whatever chicken came up first.  Not a good first experience especially when hungry after traveling all day.

There were so many awesome moments of the trip that they definitely outweigh the bad food service we had the first two attempted meals in Indy.  Spending time with our teammates is always a highlight of this trip, and I appreciated actually sharing a room and hanging out together.  This didn't really happen last year in Vegas when we had twice the size of team in attendance but it was Vegas...so you know how that goes!

These ladies are truly awesome and we made so many memorable moments!  From watching a girl literally run into a sliding glass door at  the mall to FRANCES.....this year will certainly be one we remember!

I also love because it really is like a Family Reunion.  We ran into so many of our Boot Camp sisters and friends we've made over the years.  This amazing Rockstar is a Scentsy Sister I met in Riviera Maya, Mexico last year at our Leadership Retreat.  I am so grateful for friendships that have blossomed over time because of this business.

The final night of every convention, Scentsy announces where our next convention will be and what our incentive trip is going to be for the coming selling season! I am so excited about this because I really want to prove to myself that I can work my butt off to achieve an incentive trip - and the other reward is seriously increase my income.  I'd love to be able to take me and h.i.m. on an all expense paid trip to Greece!
